Pork Chops Autumn BBQ Recipe

Barbecuing in autumn has a charm on its own. The season isn’t over – it’s just getting better, with cooler temperatures making grilling more comfortable than in summer, while the coziness and warmth of the fire become even more enjoyable.

Autumn is the perfect time to gather around the grill, not just for warmth and cosiness but for the flavours: hearty cuts of meat, smoky spices, and seasonal ingredients like apples, squash, and cider. Apple Cider Glazed Pork Chops with Charred Brussels Sprouts

Ingredients (Serves 4):

  • 4 bone-in pork chops (about 1-inch thick)
  • 2 cups apple cider (not apple juice)
  • 3 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt & black pepper, to taste
  • Olive oil for grilling

 

For the Brussels sprouts:

  • 1 lb Brussels sprouts, halved
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt & pepper

Directions:

  1. Make the glaze:
    In a saucepan, combine apple cider, Dijon mustard, cider vinegar, brown sugar, garlic, and thyme. Bring to a simmer over medium heat and cook until reduced by half, about 10–15 minutes, stirring occasionally. The glaze should be thick and syrupy.
  2. Prep the pork chops:
    Pat pork chops dry, season generously with salt and pepper, and brush lightly with olive oil.
  3. Grill the pork chops:
    Preheat your grill to medium-high heat. Grill chops 4–5 minutes per side, until they reach an internal temperature of 145°F (63°C). During the last 2 minutes, brush generously with the apple cider glaze.
  4. Grill the Brussels sprouts:
    Toss Brussels sprouts with olive oil, balsamic vinegar, salt, and pepper. Place them on a grill basket or foil tray and cook until lightly charred and tender, about 8–10 minutes, stirring occasionally.
  5. Serve:
    Plate the pork chops with a drizzle of extra glaze and a side of charred Brussels sprouts. Pair with roasted sweet potatoes or crusty bread for the ultimate fall feast.
